I like to bake with my kids once a day.
This seems really ambitious I know but there are reasons:
1. It gives me and my kids quality time (that is also productive)
2. It teaches my kids patience, math (measuring/time), obedience and a work ethic
3. It gives us home made goodies instead of store bought
4. I love baking! And that passion gets passed onto my kids too
Today I asked Jackson what he'd like to make and he said "Cupcakes!" And I knew just which ones to make! I'd just seen this and decided I could create my own version.
I decided on a carrot cupcake (Easter=bunnies=carrots was my thinking) and I was feeling lazy so I used a "Betty Crocker Super Moist" carrot cake box mix. To make them taste home made I added soy milk and lactose-free yogurt to the mix instead of water and oil. Our house is lactose-free. I also added some shredded carrot of my own to make sure they were packed full of hidden veggies. Hiding veg in cupcakes is a great Mom trick! The yogurt and added carrot really makes them a filling cupcake without being a dense heavy cupcake.
Here's how my recipe went:
Carrot Cupcakes
1 full box mix (you can use any really. Be sure to add spices too if not using the "carrot cake" mix)
1 1/2 c grated carrot
1 c milk (soy or rice milk in our case)
2/3 c yogurt (lactose free)
3 eggs

I then followed the instructions on the box on how to bake the cupcakes. For me it was 325F for 20 min.

I decided on this tasty custard icing from an old issue of Canadian Living magazine:
Custard Icing
2 Tbsp softened butter
1 c Icing Sugar
1 Tbsp Vanilla Custard Powder
1/2 tsp Vanilla
4 tsp milk (or rice milk)
Add a sprinkle of coconut and a couple chocolate eggs and Voila! A Fantastic Easter Cupcake!

First off I would like to say wonderful blog! I had a quick question that I'd like to ask if you do not mind. I was interested to find out how you center yourself and clear your head prior to writing. I've had difficulty clearing my mind in getting
my thoughts out there. I do enjoy writing however it just seems like the first 10 to 15 minutes
